Buckwheat Waffles is a great gluten-free breakfast that everyone will enjoy. In this recipe, khichuri squares are kicked out of the house with a glass of delicious Greek yogurt with strawberry-cherry commote. (And very easy!)
What is buckwheat? Although the name of the ingredient may be related to wheat. But it is not actually a grass. The edible part of the crop is the seed of the fruit related to the plant, such as ribbers. Starchy seeds are complex sugars that are rich in health benefits due to their relatively high magnesium and iron content. It is also full of fiber, which is great for digestion.
Rice grains, soba are often used to make soba and Japanese bread. It has a nice texture that is similar to regular flour, so it is a good choice for those who are glue-free. But still want to enjoy food like waffles and pancakes. It tastes better than regular flour, so strawberry and cinnamon are a great addition. But if you have crank time, feel free to serve it with maple syrup or even peanut butter!

Material
For waffles:
- 1 cup baked flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup butter (melted)
- 1 egg
- 1 1/4 cup buttermilk
- 1/2 teaspoon vanilla extract
For Compo:
- 4 cups strawberries (cut and dice)
- 1 cup cherries (peat and a half)
- 1/2 cup sugar
- 1 teaspoon lemon juice
For gloss:
- 3/4 cup Greek yogurt
- 1 tablespoon powdered sugar
Instructions
1. In a large bowl, add flour, sugar, baking powder, baking soda, and salt.
2. Place the buttermilk, eggs, butter, and vanilla in a measuring cup and beat until combined.
3. Gently mix the buttermilk mixture with the buttermilk and stir to combine. You can leave a small lump in it. B Be careful not to mix too much flour as it will be sticky.
4. Heat your waffle iron to the highest setting and grease with butter or cooking spray. Add the right amount of waffle batter. (Not every piece is the same) and cook until golden brown. Heat the waffles cooked in a 250F oven while you prepare the rest.
5. When cooking waffles, combine all the compote ingredients in a small pan. Cook over medium heat, stirring occasionally, about 10 minutes until thickened. You can refrigerate the rest of the compote for a week and serve it with other breakfast meals!
6. Grease yogurt and powdered sugar together in a small bowl. If you want to see a very nice drizzle, put the glass in a squeaky bottle.
7. Top with cooked waffles with the Lala and strawberry compote. If you feel very relaxed, add powdered sugar. Have instant fun!
